Fire Cider in the Kitchen: Creamed Spinach

When winter starts to fade and we see hints of sunshine and warm weather, we tend to start looking for fresh, whole foods after months of comfort foods. Getting enough leafy greens in your diet can be a challenge, but it's a bit easier when they're made mouth-wateringly delicious.

Our Founder, Dana, created this yummy recipe for creamed spinach that's one of our favorite dishes here at Fire Cider.

Ingredients

Spinach:

  • 4 tbsp butter
  • 3-4 garlic cloves (finely chopped)
  • 3 bags of frozen spinach (can use fresh if it's in-season)
  • Splash of Fire Cider

Sautee butter and garlic until aromatic. Add in spinach and Fire Cider and cook until wilted and cooked through.

Cream Sauce:

  • 1/5 C cream
  • 1/4 C grated parmesan
  • 1/4 C chevre
  • 1/4 C shredded mozzarella
  • 4 tbsp butter

Method:

  1. Remove spinach from pan, leaving all liquid. Pour in the cream and allow it to warm.
  2. Add additional 4tbsp of butter and all cheese and allow to melt, stirring occasionally.
  3. Transfer any additional liquid from reserved spinach into the pan and let simmer and thicken. Once thickened, add spinach back in.
  4. Stir in spinach and incorporate together, then transfer to serving bowl and enjoy!
