Fire Cider in the Kitchen: Pomegranate Sumac Dressing

If you’ve ever been to a Middle Eastern restaurant you’ve likely seen a fattoush salad on the menu. This popular salad features crunchy chopped vegetables that intermingle with torn up pieces of crisped pita bread. What steals the show, however, is the lemony dressing that coats every zesty bite. Here’s our recipe for a lemony pomegranate sumac dressing, and the fattoush salad it pairs with!

dressing ingredients:

the juice of 1 lemon

2 Tbsp. Original Fire Cider

2 Tbsp. extra virgin olive oil (we used TRE Olive)

1 Tbsp. pomegranate molasses

1 tsp. ground sumac

In a small jar or carafe, combine ingredients and shake together!

 

 

fattoush salad ingredients:

Chopped vegetables

Cucumber

Tomato

Radish

red onion

Romaine lettuce

Pita bread, torn into small pieces, or pita chips totaling 1 large handful

Method:

Chop vegetables into small pieces, throw into a medium-size bowl. Here’s the fun part! While a traditional fattoush salad feature pieces of pita bread that have either been fried or baked until crispy, we have an easy fattoush-hack for you: simply grab a handful of pita chips and crumble slightly til you have bite-sized pieces. Toss your pita pieces over the chopped veggies, pour on the pomegranate sumac dressing, and toss together to combine. Enjoy!
